...Tassie myrtle is my favourite for any utility.....I often serve from a pressure cooker that can be hot enough to char softer pines. It never got any leeway into my myrtle #7. I don't regret the slight patina of almost-scorch that my #7 did build up from being used almost daily for 3 years-in fact, that made it more precious.
I also grew to love the absolute density of the #7 in my hand, if that makes sense, ....
